Recipes

I have already posted a couple of recipes using mock oranges found in our area, but cooking is another of my interests; and I will be adding more recipes from time to time.

If any of you have recipes you would like to share, let me know.

As most of you know, I run a board and care home for chronically mentally ill adults; and providing nutritious, balanced meals is an important part of what we do for our residents.
*******
Sometime in the next decade, I plan to start a website called something like Operating a Care Home 101. In it, I will cover all aspects of residential care. I want to set it up so that others can contribute to the various categories. There will be a unit covering appropriate recipes, meal planning, budgeting, and so on; along with various kitchen tips. I will add a section on gardening and small animal husbandry, such as chickens and rabbits; showing how to add to your food supply.

I also plan to create a calendar with twelve recipes which will feature mandala designs made with vegetables and fruits. I hope to have that ready for 2012.

I ran across a video of Carolyn Myss talking about forgiveness that is inspiring. I have never heard of her, but she strikes me as being the real deal. It looks as though there are more videos of her on You Tube.

I know this is popular on the internet, but if your haven't seen it; you are in for a surprise. There is a whole series of You Tube videos about this inspiring man.

Nick says at one point,"I don't need hands to hold her heart." Wow!

Memory of Water

Here is another video which talks about the memory of water. It has great footage of Havasu Falls as well.



Many religions, including Catholics, have proclaimed the healing properties of holy water. This suggest that water is blessed or anti blessed by many influences. It lends credence to the idea that we effect our body made of water by our thinking.

Water Mysteries

This is a video on the mysteries of water that touches on other things. There are, a number of You Tube videos that touch on some of the subjects covered. They are worth exploring because they demonstrate that water has memory and that there is a lot more to its structure than we have realized.

Mock Orange Recipes

ORANGE MARINADE RECIPE AND MOCK ORANGE MARMALADE
I graduated from college with a degree in sociology, but ended up cooking for 12 years. I never felt that it was what I wanted to do with my life, but it sure comes in handy running the board & care home.

I have been riding my bike around town noticing that all the orange trees are bearing fruit. Most of the trees you see along the road are "mock" or ornamental orange trees. Their fruit is very bitter and sour; not good for either eating raw or as juice. I had been told that they were good for marmalade, so I decided to experiment to see if I couldn't come up with some uses for these plentiful fruits. It seems like a shame to have them just going to waste.

Tonight, I used the juice of some of these oranges as the basis for a marinade for chicken kebobs. It came out great, so I would like to share it with you and encourage others to see what they can come up with.

I am not going to give you precise measurements, because it can be made with all kinds of variations. This is a teriyaki like sauce with:
mock orange juice
raw sugar
molasses
honey
ketchup
mustard
garlic
soy sauce
curry pwd
Combine all the above in a bowl and let chicken set in it for about 2 hours. If marinated too long, it could become bitter or too sour.
I cut chicken into small pieces and skewered for grilling. Served over a bed of rice with a little marinade cooked and thickened to a sauce, it is wonderful.

The ingredients can be varied in many ways. You could add pineapple juice, leave out the ketchup & mustard, add oil, use black pepper or chile pwd instead of curry pwd, leave out soy sauce and add herbs, apricot jam and so on. It is great on chicken, but I think it would work with beef or pork. The particular formula I used would be good for chicken wings.

My next experiment was marmalade. I made an orange marmalade with pineapple. It took quite a bit of sugar, and was quite a bit of work; but I was pleased with the results. It has worked well on toast and I even used it to make cream cheese and marmalade on bagels. It sounds strange, but is good.

The other thing I have done with the marmalade is use it in cake. I substituted it measure for measure for applesauce in my applesauce cake recipe with very good results. I am sure it could be used in muffins and other creations like cinnamon rolls.

Bruce Lipton continued



This is a short introduction to Bruce Lipton. I think he is a vary courageous man, becasue after many years of teaching young, impressionable med students; when he realized that his own training was based on major fallacies, he came to grips with the idea that he'd been teaching future doctors to do more harm than good; and turned around to show us a better way. His is revoultionary thinking.

This video on what Bruce Lipton calls the new biology can be life changing. It prompted me to buy his book of the same name, and I feel that it is the most important book I have read since Paramahansa's "Autobiography of a Yogi" which I reas some 35 years ago. I have read a lot of inspiring books since then.

A friend forwarded these photos as an e mail. It didn't include much info, but one starts out on the tram and climbs up to the top to a restaurant. If you make the climb, the meal is free. It came titled as "The Climb".
