Recipes

I have already posted a couple of recipes using mock oranges found in our area, but cooking is another of my interests; and I will be adding more recipes from time to time.

If any of you have recipes you would like to share, let me know.

As most of you know, I run a board and care home for chronically mentally ill adults; and providing nutritious, balanced meals is an important part of what we do for our residents.
*******
Sometime in the next decade, I plan to start a website called something like Operating a Care Home 101. In it, I will cover all aspects of residential care. I want to set it up so that others can contribute to the various categories. There will be a unit covering appropriate recipes, meal planning, budgeting, and so on; along with various kitchen tips. I will add a section on gardening and small animal husbandry, such as chickens and rabbits; showing how to add to your food supply.

I also plan to create a calendar with twelve recipes which will feature mandala designs made with vegetables and fruits. I hope to have that ready for 2012.

I ran across a video of Carolyn Myss talking about forgiveness that is inspiring. I have never heard of her, but she strikes me as being the real deal. It looks as though there are more videos of her on You Tube.

I know this is popular on the internet, but if your haven't seen it; you are in for a surprise. There is a whole series of You Tube videos about this inspiring man.

Nick says at one point,"I don't need hands to hold her heart." Wow!

Memory of Water

Here is another video which talks about the memory of water. It has great footage of Havasu Falls as well.



Many religions, including Catholics, have proclaimed the healing properties of holy water. This suggest that water is blessed or anti blessed by many influences. It lends credence to the idea that we effect our body made of water by our thinking.

Water Mysteries

This is a video on the mysteries of water that touches on other things. There are, a number of You Tube videos that touch on some of the subjects covered. They are worth exploring because they demonstrate that water has memory and that there is a lot more to its structure than we have realized.

Mock Orange Recipes

ORANGE MARINADE RECIPE AND MOCK ORANGE MARMALADE
I graduated from college with a degree in sociology, but ended up cooking for 12 years. I never felt that it was what I wanted to do with my life, but it sure comes in handy running the board & care home.

I have been riding my bike around town noticing that all the orange trees are bearing fruit. Most of the trees you see along the road are "mock" or ornamental orange trees. Their fruit is very bitter and sour; not good for either eating raw or as juice. I had been told that they were good for marmalade, so I decided to experiment to see if I couldn't come up with some uses for these plentiful fruits. It seems like a shame to have them just going to waste.

Tonight, I used the juice of some of these oranges as the basis for a marinade for chicken kebobs. It came out great, so I would like to share it with you and encourage others to see what they can come up with.

I am not going to give you precise measurements, because it can be made with all kinds of variations. This is a teriyaki like sauce with:
mock orange juice
raw sugar
molasses
honey
ketchup
mustard
garlic
soy sauce
curry pwd
Combine all the above in a bowl and let chicken set in it for about 2 hours. If marinated too long, it could become bitter or too sour.
I cut chicken into small pieces and skewered for grilling. Served over a bed of rice with a little marinade cooked and thickened to a sauce, it is wonderful.

The ingredients can be varied in many ways. You could add pineapple juice, leave out the ketchup & mustard, add oil, use black pepper or chile pwd instead of curry pwd, leave out soy sauce and add herbs, apricot jam and so on. It is great on chicken, but I think it would work with beef or pork. The particular formula I used would be good for chicken wings.

My next experiment was marmalade. I made an orange marmalade with pineapple. It took quite a bit of sugar, and was quite a bit of work; but I was pleased with the results. It has worked well on toast and I even used it to make cream cheese and marmalade on bagels. It sounds strange, but is good.

The other thing I have done with the marmalade is use it in cake. I substituted it measure for measure for applesauce in my applesauce cake recipe with very good results. I am sure it could be used in muffins and other creations like cinnamon rolls.

Bruce Lipton continued



This is a short introduction to Bruce Lipton. I think he is a vary courageous man, becasue after many years of teaching young, impressionable med students; when he realized that his own training was based on major fallacies, he came to grips with the idea that he'd been teaching future doctors to do more harm than good; and turned around to show us a better way. His is revoultionary thinking.

This video on what Bruce Lipton calls the new biology can be life changing. It prompted me to buy his book of the same name, and I feel that it is the most important book I have read since Paramahansa's "Autobiography of a Yogi" which I reas some 35 years ago. I have read a lot of inspiring books since then.

In this life, I have lived in two different worlds.
I used to live in a jungle and life was a constant struggle to survive, ending in death and nothingness.
Now I live in a garden, a place of peace leading to rebirth and eventual unity with all that is.
My world was a place to be feared, endured, manipulated and dominated when I could.
My new world is one of harmony and cooperation in which I feel encouraged and supported.
My old universe was an accident tumbling toward entropy. It was threatening, confusing, and ultimately meaningless. My world was filled with despair, misery, suffering, senseless killing, and scary monsters in the dark.
Now this cosmos is evolving from a mighty intelligence to a coming home. My life has meaning and my days are filled with purpose and the energy to carry it out. Creation makes sense and inspires my awe and reverence. I am happy to be a part of this grand orchestration. I know why I am here and am grateful for God’s trust in me.
In my old world, I was a genetic misfit and thought the world would be better off without me. My genes were out to get me, and I expected to be dead by thirty. I came close to fulfilling that prophecy and was running scared to I knew not where.
Now, I live in a world full of grace in which miraculous is not only possible, but my God is eager to assist in healing if I will but do my part. I now live in a body fashioned according to a divine matrix which works beautifully as long as I work in harmony with cosmic law. I expect to live a full life and leave when I am ready.
I used to live in regret over the past and apprehension of the future. Work was hard, and life was fundamentally unfair. Peace was an illusion and contentment an empty word.
Now, work and service are a joy, and I take satisfaction in the little things of life. Everything is interesting, and I am fascinated by the whole play of life. I enjoy the ride and am not attached to the destination. I fully accept what existence has to offer and don’t waste time dwelling on the past or anticipating the future. Now is good enough for me, and I have a heightened awareness of each moment as it comes.
My needs are few, and I trust the universe to provide; so there is no need to grasp for more or cling to what I have.
Yes, there was pleasure, excitement, and moments to remember; but they were fleeting and my attempts to hold on to them were for not. Frustration, anxiety, and resentment followed me all of my days. I would have liked to lash out, but against whom or what I could never figure out. As far as I could see no one was in charge and everything was out of control. Who to blame?
Today, I am not attached to anything for there is no need. Health and peace of mind follow my opening to the light which pervades this creation. Growth and new realization are my constant companions and contentment is part of my new being.
Hunger and thirst of all kinds drove me on, but I had lost hope that it could turn out right. I dared not slow down for fear that my demons would catch up to me. Now, I slow down daily and listen to the stillness. I know myself and accept the totality of my being. I accept that I am just what I need to be.
Communion and atonement guide my every step and angels look over me. I have faith that all will be as it needs to be. This planet is a school to which we have all come to learn our necessary lessons. Too often, we learn in the school of hard knocks, but we are learning and progressing to inevitable graduation.
I used to think that life was beyond my control, but now I see the events which come to me as the result of choices I have made. Everything happens for a reason, and there is a guiding intelligence that knows my every need.
I used to think that I had to fight for everything that I got, but now I relax knowing that it is safe to be humble. I don’t need to control situations, for everything is unfolding for the greater good. I just need to get out of the way and allow the spirit to have its way.
I used to feel that life was a cruel joke; but now I realize that all is a state of mind, and we choose it minute to minute, day to day. I choose daily which world I live in, and know that the positive is but a thought away.
The struggle to make ends meet was often overwhelming, but I have learned to live simply and am content with what I have. There is no need to keep accumulating things, praise, or experiences. In this moment, all is sufficient; indeed, abundance of what is important is the rule.
I used to blame others starting with a nonexistent God, my parents, this unfair world and kept a long list of hurts and disappointments.
I no longer have to blame others, for I know that I have created my own reality; and I have everything I need for my awakening. I respect other people’s choices and allow them to take their own path because I am sure that we are all in this together and we are all headed to the same home. I am content to do my little part, confident that it is enough; and with the understanding that we never know where the ripples go.
I used to run from my dark side, but have come to a self acceptance that once seemed impossible. I see all as grist for the mill.
I used to take things personally and felt hurt and abused. I created drama and lived a chaotic existence. In contrast, I now try to keep to the impersonal approach and take no offense. Everything works to the ultimate good of all concerned. It may not all be to my liking, but I trust that a higher power knows more than I.
I used to resist life, and it became more difficult with time and age. Now, I try to go with the flow and find the burden lightening, with time. I would wake in dread of the new day and had to drag myself out of bed. Now, I great each day with enthusiasm and keep a cheerful attitude.
I would try to stand strong against the gale, but now I sway gently in the breeze. My life seemed to be one misstep and one dead end after another, but now I look back to see that even the mistakes lead me to this point in which my life opens to ever new possibilities. Through some mysterious process, so much has been brought together in unexpected ways. Life in my new world is an adventure.

I just learned how to download free fonts from online, so I will be experimenting with new ones. This is called Tristam bold. I combine the quote with a red & yellow prickly pear cactus flower composition. Have a good week.

Flash Floods

FLASH FLOODS
I have never experienced a flash flood and have wondered what one looks like. I decided to go to You Tube. They have several great videos. The Kellick Creek one may be the most dramatic.
The other thing that makes these dangerous is that they often carry a lot of debris. Every summer, we have people getting stranded in washes which get flooded with the rains. Tucson had instituted the "stupid motorist law".
This law says that people have to pay for their fire department rescue. As little as 2' of water can be enough to sweep an SUV off the road.
What makes them dangerous in our area is that it may not be raining in your area, but if there has been a heavy storm upstream, you can get hit by one without warning. We have lots of roads and streets that cross dry washes that can be filled in seconds.
